Grant Achatz Pushing Limits

Here is a pretty fascinating backstage peek into the genesis of a dish served at Alinia, in Chicago, owned by Chef Grant Achatz. Achatz will be joining the Harvard Lecture Series on Science and Cooking again this year. I met him there last year and found him to be one of the most inventive chefs I've ever encountered. We will definitely be there for his lecture this year.
