Great Summer Salad

What says Summer more than delicious, sweet, ripe peaches?


One of my favorite salads is a flavorful, refreshing combination that makes a great light lunch or even dinner, with a slice of Tuscan bread, during the dog days of Summer. The fruity/salty mix and crisp greens makes for a very different taste sensation which seems to hit all the right notes in the warm weather. Try it with an ice cold lime rickey as your beverage.

Summer Salad with Peaches and Pecorino Romano Cheese

INGREDIENTS

Dressing
1 small shallot, finely diced
3 tablespoons champagne vinegar
1 1/2 teaspoon honey, optional
1/2 cup extra-virgin olive oil
Salt and freshly ground pepper, to taste

2 peaches, peeled if desired
1/2 pound fresh salad greens
1/2 cup shaved Pecorino Romano cheese

In a large bowl, combine all ingredients. Whisk until emulsified.

Toss greens with sliced peaches and just enough vinaigrette to coat. Shave cheese with vegetable peeler and garnish.
