We like to keep in touch with Chefs who have worked in and around New England and impressed us with their culinary skill. Like us, you may wonder whatever happened to that Chef at your favorite restaurant who is no longer there? They slip out so quietly sometimes. Many spend time in Boston and leave to pursue other adventures, often in exotic locations. You never know when they might return. So, we're beginning a new series featuring short updates on former Boston Chefs called "Where Are They Now?" Our first guest is Chris Damskey, former Executive Chef at Market by Jean Georges at the W Hotel Boston.
It turns out that Chris is basking in the sunny southwest shores of the paradise otherwise known as Maui. He is Chef De Cuisine at Alan Wong's Amasia restaurant, located in the Grand Wailea Resort. Nice gig for a boy from the Midwest! And a nice opportunity to work with a James Beard Award winning Chef.
When he is not surfing (he just bought a new surfboard) he is busy learning the ethnic flavors of Filipino, Korean, Portuguese, Chinese, Japanese and Polynesian culture in what he calls the "true Pacific melting pot" that we would call Hawaii.
Popular menu items at the restaurant include: Soy Braised Short Ribs with Ko Choo Jang Sauce, Shoyu Duck Bao Buns, Robata Beef Tenderloin with foie gras mustard, moromi miso, and Maui Gold Pineapple, "shaved ice" lilikoi and Hawaiian vanilla bean panna cotta.
If this Sashimi with Strawberry Reduction and Evoo pic that Chris sent along is any indication of the fun he is having then we might just need a trip soon. Preferably in January or February. If any Bostonians are visiting Maui soon, please let us know. We'd love to introduce you the the Chef.
